Weekly Menu



Tuesday (Vegetarian) : Vegetarian Artichoke Stew with Sautéed Spaghetti

Wednesday (Chicken): Chicken Parmesan, Vegetable Sauté 

Thursday: Left Overs Day *

Friday (Vegetarian) : Tomato Soup, Super Mom Salad, Double Cheese Baked Potatoes

 




* Let Thursday be a cooking free day, take a break from that kitchen and serve Left Overs.

Nachos Casserole

An amazing Mexican side dish specially if served with Guacamole! 

Preparation time: 25 minutes
Serves 5

Ingredients

2 tbsp canola oil
2 red onions, chopped
2 cloves garlic, crushed
6 medium tomatoes, peeled, seeded and chopped
1 small green pepper, seeded and chopped
1 small red pepper, seeded and chopped
1 tbsp red wine vinegar
1 tsp sugar
1/2 tsp ground chili powder
375g sweet corn, drained
125g packet plain corn chips
1 1/2 cups grated yellow cheddar cheese
1 cup sour cream
1/ cup chopped chives

Directions

  • Preheat oven to warm 160 C
  • Heat oil in medium heavy-based pan. 
  • Add onions and garlic, cook over medium heat for 3 minutes.
  • Add tomatoes, pepper, vinegar, sugar and chili powder. cook uncovered for 7 minutes or until tomatoes are soft and most of the liquid has evaporated.
  • Add corn; stir over low hear for 3 minutes
  • Arrange layers of corn chips, sauce and cheese in a casserole dish, finishing with a cheese layer
  • Spread sour cream evenly on top
  • Bake uncovered for 15 minutes, sprinkle with chives before serving

Mediterranean Green Beans in Oil or Loubieh Bi' Zeit


Preparation time: 35 minutes
Cooking: 2 hours

Ingredients


1 Large onion, finely chopped
5 red plum tomatoes, peeled and pureed
2 whole garlic heads, cleaned and slightly peeled
1 kg green beans, washed, cut off the ends and cut in half
1 tsp salt
1/8 cup olive oil
4 cups water
1 tsp tomato paste

Directions


Heat a pot, pour the olive oil, onions and 2 whole garlic heads.
Stir on a high heat until the onions are golden.
Add the green beans, and don't forget to cut off the ends and cut the beans in half
Stir every minute or until  the green beans' color slightly changes, in approximately 5 mns.
On the side, mix the water with the tomato paste and salt.
Pour the water mixture and pureed tomatoes over our cooking ingredients.
Bring to the boil, then reduce to low heat, and simmer for 1 hour and a half or until the beans are very tender.
* Taste it for salt.

Recipes: Chicken Potato Croquette




Ingredients


Basic Potato Mixture


1 kg old potatoes, peeled, chopped and boiled
2 egg yolks
2 tbsp cream
150 g plain flour
2 eggs, lightly beaten
150 g breadcrumbs
vegetable oil for deep-frying

Filling


2 cans corn, rinsed and drained
1 1/2 cups chopped cooked chicken ( about 200g)
1/4 cup chopped fresh parsley
1 1/2 tsp chicken stock powder


Directions


Mash potatoes well, stir in egg yolks, cream and the filling ingredients. Cool.
Shape into small fingers, roll in flour, shake away excess flour, dip in eggs, then breadcrumbs.
Place on oven tray, cover and refrigerate for instint use or if you want to store in your freezer place in single layers, between sheets of freezer paper in an  airtight container. This makes them easy to separate.

Kids Meal: Mashed Potatoes With Carrots

   Mashed Potaoes with Carrots


 

Ingredients 

  • 4 medium potatoes, boiled or steamed
  • 1 carrot, boiled or steamed
  • 1/3 cup of milk
  • 1/4 cup of cream
  • pinch of salt
  • pinch of black pepper
  • pinch of nutmeg   
  • optional:  1 black olive


Directions

  1. Mash the potatoes, put them in a pot, add milk, cream, salt, pepper and nutmeg. Mix with a wooden spoon and bring to a boil on a Low heat. 
  2. Save half of the mixture aside, and mash the carrot with the rest of the mashed potatoes
  3. Now you have 2 colors yellow and orange. Get creative!
  4. You can use half a pitted olive for the eye. 

Mash vegetables with your potatoes to encourage your kids to have a healthy diet. You can replace the carrots with beetroots or spinach to have pink or green mashed potatoes.

A small touch of creativiy will motivate you child to eat the whole meal!
