Spinach and Eggs Salad


Serves 3
Preparation Time: 20 mns

Ingredients

500 g young spinach
1 large red onion, sliced into rings
3 hard-boiled eggs, cut in half
100g pitted, halved black olives
200g chopped fresh mushrooms

Dressing

1/4 cup lemon juice
1/8 cup white vinegar
1/4 cup garlic olive oil
Black Pepper and Salt to taste

Directions

You can either toss all the ingredients together and serve, or start by decorating your serving plate with the young spinach leaves to form a large flower and place the onions, eggs and olives in between the leaves as shown in the picture and the dressing can be served on the side.

Thai Chicken Balls

Thai Chicken Balls

Preparation time: 20 minutes
Total cooking time: 40 minutes
Makes about 50 balls

Ingredients

1 kg minced chicken
1 cup fresh breadcrumbs
5 spring onions, sliced
1 tbsp ground coriander
1 1/2 cup chopped fresh cilantro
1/4 cup sweet chili sauce
1 tsp salt
1-2 tbsp lemon juice
oil, for shallow frying

Directions

Preheat the over to 200 degrees C.
Mix the chicken and breadcrumbs together.
Add the spring onion, ground and fresh coriander, chili sauce and lemon juice, and mix.
With wet hands, form into evenly shaped balls.
Heat around 3 cm oil in a deep frying pan until a cube of bread browns in 15 seconds.
Cook the balls few at a time until golden.
Bake on a baking tray until cooked through.

Vegetable Beef Rolls

Preparation time: 30 minutes
Makes 20

Ingredients


500g beef fillet, 8 cm in diameter
3 tbsps olive oil
1 1/2 tbsps horseradish cream
1 1/2 tbsps wholegrain mustard
1 zucchini, cut into fine strips
1 small carrot, cut into fine strips
1 small red pepper, cut into thin strips
60 g snow peas, cut into thin strips

Directions


  1. Preheat the oven to moderately hot 200 C.
  2. Trim the beef of excess fat and sinew and brush with a little of the oil
  3. Heat a heavy-based frying pan over high heat and brown each side of the beef fillet quickly, to seal in the juices.
  4. Transfer to a baking dish and bake for 20 minutes
  5. Remove and set aside to cool
  6. Slice the cooled beef very thinly
  7. Combine the horseradish cream and the mustard, then spread a little over each slice of beef.
  8. heat the remaining oil in a pan and cook the zucchini, carrot, pepper and snow peas quickly over high heat, and then allow to cool.
  9. Place a small bunch of the cooked vegetable strips on the end of each beef slice and roll up.
  10. Arrange on a platter and serve

Recipes: Feta, Tomatoes & Olives Pie

Feta pie

Preparation Time: 35 minutes
Cooking Time: 20 minutes
Serves 6

Ingredients


For the filling :


300 g red tomatoes, peeled and chopped
200 g feta, diced
100 g black olives, pitted and diced
1 tsp dried basil
1 tsp dried thyme
2 tbsp garlic oil

For the dough:


2 cups all-purpose flour
125 g butter, chopped
60 g Parmesan, grated
1 tbsp sesame seeds
1 egg
pinch white pepper
pinch black pepper
dried thyme


Directions


  • Sift the flour into a large bowl and add the butter. 
  • Rub together with your fingertips until the mixture resembles fine breadcrumbs. 
  • Stir in the Parmesan, thyme and sesame seeds. 
  • Make a well, add the egg and mix well with your hands until the mixture comes together, add a little cold water if the dough is too dry. 
  • On a lightly floured surface, press together into a ball, then wrap in plastic wrap and refrigerate for 10 minutes. 
  • Roll out on the pie tin and bake for 10 mns or utnil golden. 
  • Cool.
  • Mix all the filling ingredients together, spread them all over the pie. 
  • Garnish and serve.
