Ten Summer Snacks My Kids Actually Love (That Are Healthy and Quick!)

If your kids are anything like mine were, then they seem to get hungrier the moment school is out. Summer means more play, more energy spent—and somehow, more “I’m hungry!” whines echoing through the house.

As a mom juggling creativity, work, and the chaos of summer break, I’ve learned the hard way that snacks can make or break the day. And if you’re trying to balance nutrition, speed, and a sprinkle of fun? Well, you’re in the right place.

So today, I’m opening my kitchen and my heart to share with you the healthy summer snacks my kids actually love—and trust me, I’ve tested plenty that didn’t make the cut!

These are quick, simple, and made with real ingredients I can feel good about—plus, they’re all approved by my toughest food critics: my daughters.

Dessert: Spice Cake with Nuts

Spice Cake




As a super mom, you would definitely want to have the largest choice of dessert to serve to your family and visitors. Our blog posts a large number of healthy and delicious desserts from which you can choose. Enjoy!
Ingredients

  • 1 cup unsalted butter
  • 3/4 cup golden syrup
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp pumpkin pie spice
  • pinch of ground cloves
  • 12 tsp freshly ground black pepper
  • 3 eggs
  • 1 tbsp lemon zest
  • 4 cups flour, whole wheat if possible
  • 3 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 cup liquid milk
  • pinch of salt


Directions

  1. Combine the butter with the golden syrup in a food processor. 
  2. Beat until creamy, then add the eggs one at a time. Add the spice and the lemon zest.
  3. Mix the remained dried item in a large bowl, on the side. Flour, cocoa and baking powder and add the milk little by little while mixing or beating.
  4. the quantity of milk used depends on the consistence of the mixture. You may not need all the specified quantity. 
  5. Grease a small loaf pan, cover it with baking paper. 
  6. Pour the mixture into the pan.
  7. Bake over high heat 240 degrees C for 40 minutes.


Sugar Frosting
Mix 1 cup of confectionery sugar with 1 tbsp water.
Top your cake with the frosting and sprinkle some mixed nuts.

Casserole Recipes: Fish Casserole with Cheddar and Tomato Topping

Fish is the healthiest choice you can provide your family with. If you're going low on ideas, then please check out my recipes. Your family will have a delight tasting one of my fish recipes. In less then 30 minutes, your meal will be prepared, warm and ready to be eaten. Every super mom's dream! 

Ingredients

  • 1 tablespoon Canola oil for greasing
  • 150g orange cheddar, grated
  • 2 tablespoons wholegrain mustard
  • 4 tablespoon crème fraîche 
  • 4 fish fillets ( about 200g each)
  • 3 medium tomatoes, sliced into thing rings
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt

Directions
  1. Season your fish fillet in white pepper, black pepper and salt.
  2. In a bowl, mix the cheddar, mustard and crème fraîche.
  3. Place the fish fillets in a greased casserole.
  4. Top with the tomato slices.
  5. Spoon over each fillet an equal quantity of the cheese mixture.
  6. Place the casserole, uncovered, in a preheated oven ( 200 C).
  7. Cook for 30 minutes or until the cheese has melted and turned golden and the fish is cooked through. 
  8. Serve with a green salad on the side.
